1 1/2 lbs. Glier's goetta (or sausage or bacon)
2 - 3 potatoes (enough to yield 3 or 4 c. hash browns)
2 c. good melting cheese (cheddar-jack is nice)
3 - 4 c. spinach leaves
18 lg. eggs
2 tbsp. butter
2 tbsp. olive oil
salt and pepper

Preheat oven 400ºF. Cook meat in round patties, also get hash browns started. Brown them in butter and olive oil. Once browned, transfer potatoes to 9 x 13 inch casserole dish. Layer on meat. Crack all eggs into bowl, adding
salt and pepper to taste. Add 1 1/2 c. cheese, reserving 1/2 c. for later. Whisk eggs. Add spinach. Pour into casserole dish. Bake for 20 minutes. After 20 minutes add rest of cheese. Return to oven and bake another 5-10 minutes.
