1/4 c. flour
1/4 c. breadcrumbs
1/8 c. cornstarch
1 T. dried parsley
1/2 tsp. black pepper
1/2 tsp. salt
3 T. butter
1 T. olive oil
2 chicken breasts
1/3 c. white wince
1/3 cup fresh lemon juice
1/3 cup capers, drained

Directions:
Directions:
Combine flour, breadcrumbs, cornstarch, parsley, pepper, and salt for breading. Set aside one tablespoon of breading. Butterfly chicken and coat in breading mixture. Heat oil and 2 T. of the butter in a medium skillet. Cook both sides of first chicken breast until golden brown. Set aside. Add remaining butter and similarly cook second chicken breast and set aside. Deglaze pan with white wine. Add lemon juice and reserved portion of breading. Scrape and incorporate drippings from chicken. Allow sauce to thicken slightly. Add capers and return chicken to pan. Cook a further 5 minutes. Serve over pasta.
