2 pie crusts
1/2 c. packed brown sugar
1/2 c. chopped pecans
1/3 c. flour
1/4 c. butter
2/3 c. sugar
3 tbsp. flour
2 tsp. ground cinnamon
1 tsp. lemon juice
dash salt
6 c. thinly sliced, peeled cooking apples (about 2 1/4 lbs.)
10 caramels, cut in half
half & half, light cream or milk

Place one pie crust in 9-in. pie plate. For praline mixture: combine brown sugar, pecans, 1/3 c. flour and melted butter. Mix well and set aside. In a large mixing bowl combine sugar, 3 tbsp. flour, cinnamon, lemon juice and salt. Add the apples and toss to coat. Transfer half of the apple mixture to the pastry lined pie plate. Top with half of the praline mixture, followed by all of the caramels. Repeat layers with the apples and praline mixture. Lay second pie crust over the top, cut slits in top crust and trim 1/2 inch beyond the edge of pie plate. Fold top pastry under bottom pastry, fluting edge. Brush crust with the half & half, cream or milk. Cover edge with foil. Bake at 375ºF for 35 minutes. Remove the foil and bake another 20-25 minutes, or until the top is golden and the apples are tender.
