Thaw out the turkey the night before, best thawed in ice water. Dry turkey inside and out with paper towel.
Refer to stuffing recipe and loosely stuff bird. Pat outside with butter and salt and pepper well. If you are not going to stuff the bird, put a half an onion and apple inside the cavity. Place in large roast pan on a turkey lifter and cover with foil. Start off in a hot oven about 425° for 1 hour and then lower temperature to 350° until it reaches proper temp on a thermometer. Remove from pan and make gravy.

Sprinkle flour or cornstarch (for gluten free) in roast pan of drippings. Stir to mix and add chicken broth (amounts will vary depending on how much gravy you want). Add salt and pepper to taste.

Great Grampa Davis would stand by the oven when Gramma would check on the Christmas Turkey. He loved Turkey dinner and would do a little dance when the turkey was ready to eat.
