2 c riced (or very well mashed) potatoes
1/2 tsp salt
1 tbsp shortening
1 1/2 c flour

Directions:
When mixing dough use only 3/4 cup flour. Use the rest when rolling out lefse. Dough may be formed into a long roll and then cut into pieces large enough to make a lefse to fit the size of baking surface. Roll out dough very thin with die cut rolling pin. I have a griddle that reaches 500º which is optimal temp. but a hot stove plate will work as well. Bake on both sides to a light brown on top. Use a long stick to help in turning the lefse.
