1 pound lean ground beef
1 box (8 oz) seasoned black beans & rice ( I use Zatterans)
1 can (14.5 oz) diced tomatoes with green chilies
1 (10 oz) pkg. frozen corn
1/2 c. packed cilantro (I omit this)
1 c. shredded sharp cheddar cheese
1 1/2 c. water

Directions:
Directions:
Cook beef in a skillet over medium heat breaking up clumps of meat with spoon until no longer pink. Stir in rice and beans, tomatoes, corn and 1 1/2 c. water. Bring to a boil and reduce heat. Cover and simmer for 20 min. or until the water has been absorbed. Meanwhile, chop cilantro, sprinkle on each serving along with cheese.
