Simply Hash Browns (20 oz pkg)
1/4 cup Onion, chopped
1 Garlic clove, chopped
Salt and Pepper to taste
2 Tablespoon Butter
2 Tablespoon Vegetable oil
1/4 cup Cooked crisp bacon, chopped
1/4 cup Cheddar cheese, grated

Directions:

1. Mix hash browns, garlic and onion. Salt & pepper to taste.
2. In a 6 inch non stick omelet pan, heat oil and butter over medium heat until bubbling. Add half the hash brown mixture in the pan. Layer cheese and bacon. Cover with remaining half of hash browns. Using a spatula, form hash browns in a round circle.
3. Cook for 8 minutes.
4. Place a plate on top the pan. Turn pan over flipping hash browns onto the plate. Slide hash browns back in the pan. Cook second side for 8 minutes.
