Mini Apple Pies Recipe

4 medium apples
1/3 cup sugar
1 teaspoon Pampered Chef Cinnamon Plus Spice blend or Cinnamon
Single prepared pie crust

Topping:
1/4 cup flour
1/4 oatmeal
1/4 brown sugar
1/4 cup butter (cut in small pieces)

Directions:
Directions:
1. Preheat oven to 350 degrees.
2. Peel and core apples. Chop finely.
3. In a microwavable bowl, fold sugar and Cinnamon Plus Spice Blend into apples. Microwave for about 2 minutes. Set aside.
4. Roll open pie crust. Cut into 2 inch circles. (I used the lid for my cooking spray to cut my circles). You should be able to get about 20-24.
5. Coat mini-muffin pan with cooking spray. Press pie crust dough pieces into the muffin pan, making sure it goes at least part way up the side.
6. Fill dough with apple mixture, about a teaspoon in each mini pie.
7. Prepare topping by blending all topping ingredients together until crumbly in food processor or using a pastry blender. Top each mini pie with about a 1/2 teaspoon of topping. You will probably have topping left.
8. Bake for about 15-20 minutes, until topping is lightly browned and apple filling is bubbling up around the edges.
9. Cool in pan for about 10 minutes and then remove mini pies from pan to a plate to cool.
