3 sticks butter, room temperature (DO NOT USE MARGARINE)
1/2 c. sugar
3 scant cups flour
1 c. chopped pecan
1 T. vanilla

To Dip Cookies in:
1/2 c. sugar
1 heaping tsp. powdered sugar

Directions:
Directions:
Cream butter and sugar. Add vanilla, flour, and pecans mixing after each one. Roll into 3 logs on wax paper. Refrigerate at least a few hours. Cut into slices and bake at 325º for 12-15 min. until edges are slightly brown. Remove from oven and cool completely. Combine 1/2 c. sugar and 1 heaping teaspoon of powdered sugar in a bowl and mix well. When completely cool, dip cookies in sugar mixture.

These last a very long time since there is no egg in them and they are perfect make ahead cookies!
