Wet ingredients:
1/4 cup shortening
1/4 cup butter
1/2 cup peanut butter (or a little more)
1/2 cup sugar
1/2 cup brown sugar
1 egg

Dry ingredients:
1 1/4 cups flour
1/2 tsp. baking powder
3/4 tsp. baking soda
1/4 tsp. salt

Directions:

Mix wet ingredients thoroughly. Mix dry ingredients together in a separate bowl. Gradually add dry ingredients into wet.
Once mixed well, chill dough for at least one hour. Can be chilled overnight and cookies made the next day.
Roll dough into balls the size of large walnuts. Place 3 inches apart on lightly greased baking sheet. Flatten with fork dipped in flour - crisscross. Bake in 375º oven until set, but not hard, between 10 and 12 minutes.
