For Angel Cups:
4 slices of fresh bread
Butter
4 medium eggs

Hollandaise Sauce:
3 egg yolks
1 tbsp. lemon juice
1/2 tsp. salt
2 drops hot sauce (or more to taste)
1/2 cup melted butter

Directions:
Directions:
Remove crusts from bread; butter generously on one (1) side. Place buttered side down in cupcake pan. Drop an uncooked medium egg in each nest; bake for 20-25 minutes at 350º.
Serve with hollandaise sauce and bacon or sausage.

For sauce: In a blender, mix all ingredients except butter. Slowly pour melted butter into blender while mixing on low speed. Makes 2/3 cup.
