Quiche:
6 large eggs (beaten)
1 1/2 c. heavy cream
Dash of salt and pepper
2 c. chopped fresh baby spinach (packed)
1 lb. bacon~cooked and crumbled
1 1/2 c. shredded Swiss cheese

Pie Crust:
2 c. all purpose flour
1/4 tsp. salt
2/3 c. butter
4 to 5 tbsp. water

PieCrust:
~Combine flour and salt in a large bowl. Cut in butter until mixture resembles coarse crumbs.
~Stir in enough water until flour is moistened. ~Divide dough in half and make into 1 ball. Roll ball on a floured surface to make a 12" circle.
~Fold into quarters and unfold into a 9" pan. Use remaining dough to make the edge.

Quiche:
Preheat over to 375º
~Combine eggs, cream, salt, pepper in a blender or mix on high speed
~Layer spinach, bacon, and cheese on bottom of crust, then pour the mixture on top
~Bake for 35 to 45 minutes until egg mixture is set

When baking this quiche you may want to cover the crust's edge with foil for the first or last 15-20 minutes so it doesn't burn.
