1 cup butter or margarine
½ cup light brown sugar
2 egg yolks (un-beaten)
½ tsp. vanilla
¼ tsp. salt
2 cups sifted flour
2 egg whites (un-beaten)
1 ¼ cups finely copped nuts (walnuts or pecans)

Directions:
Directions:
Heat oven 350°F. Cream butter; add sugar and egg yolks; mix well. Blend in vanilla, salt, and flour. Shape into balls and dip them into slightly beaten egg whites, then roll in the nuts. Bake on ungreased cookie sheet for 5 minutes. Remove from oven and make a dent in center of each cookie while still warm (small thimble works great for this). Return to oven and bake 8-10 minutes more. Cool & fill with (powdered sugar) icing or jam or other fillings.
