1/2c plain yogurt
6T. butter, divided
1 large whole onion
4 clove garlic
1( 2 inch piece) fresh ginger
3 Tbsp. garam masala
28oz diced tomatoes
1 Tbsp. sugar
1 1/2 c heavy cream
2c basmati rice
fresh cilantro
serrano or jalapeno peppers (optional)
1T. tumeric
1c frozen peas

If the chicken breast are very thick, it helps to flatten/tenderizer them some. Season the chicken breasts with salt. Next sprinkle them on both sides with coriander and cumin. Then coat the chicken breasts completely in yogurt. Set the chicken on a metal rack over a foil lined sheet and place it about 10 inches below a broiler for 5-7 minutes per side. Watch carefully so as not to totally char the chicken. It should have slightly blackened edges. Remove from oven. Dice onion and in large skillet melt 2 Tbsp butter over med-high heat. Toss in onions and saute until slightly browned. As onions cook, mince garlic and peel and grate ginger. Add garlic and ginger to onions, along with 1Tbsp salt. Add 3Tbsp garam marsala seasoning. Add in diced tomatoes and stir well. Add 1Tbsp sugar. Let the mixture simmer on medium for 5-10 minutes. To rice cooker add 2c rice, 4Tbsp butter, 1tsp. salt, 1Tbsp. tumeric and 4c water. Cover and turn on rice cooker. Add in the 1 1/2c heavy cream to tomato spice sauce. Chop up the chicken breasts into chunks and stir them into the sauce. Add in a handful of chopped cilantro. When the rice is cooked, throw in 1c frozen peas and stir. The heat of the rice will heat the peas through. Serve the tikka masala over rice and sprinkle with fresh cilantro if desired.

We love this Indian dish. You can make it hotter by either adding more spice or adding chopped serranos or jalapenos to the sauce before adding in the diced tomatoes.
