1c whole wheat flour
2 1/4c bread flour (or white flour)
2T. brown sugar
1 1/4tsp. salt
3/4T. yeast
1/2c raisins
1T. cinnamon
1 1/4c warm water

Directions:
Directions:
In large bowl combine flours, brown sugar, salt, yeast, and raisins. Stir everything together until evenly combined, breaking up any raisin clumps. Add in the warm water and stir. If the dough does not come into one cohesive ball (with no dry bits left at the bottom of the bowl) add a little more water, one T at a time, until it comes together. Loosely cover the bowl (I lay a towel over the top) and let rise until doubled, usually 1-2 hours. Turn dough out onto floured surface and knead it a couple times to work in enough flour to keep it from sticking to your hands. Flatten and stretch into a rectangle. The short side should be the length of your bread pan. The long side should be double that length. Sprinkle cinnamon over the dough (I usually sprinkle some more brown sugar on the surface too). Roll the rectangle up and place in a greased bread pan. Let rise until about 1 inch above top of pan. Preheat oven to 425º. Brush the top of the loaf with water. Bake for 25-30 minutes until a deep golden brown. Turn out onto cooling rack and let cool completely before slicing (or at least 30 minutes).
