Ingredients:  
2 c cubed fresh pineapple or canned pineapple chunks packed in pineapple juice, drained
1/3 c finely diced white onion
2 T fresh lime juice
2 fresh jalapeņo peppers, seeded and minced
1/2 small red bell pepper, diced
1 T brown sugar
1 T orange liqueur such as Triple Sec or substitute undiluted frozen orange juice concentrate
2 t rice wine or white wine vinegar
1 T fresh cilantro, chopped

Directions:

Combine all ingredients in a medium non reactive saucepan. Simmer over low heat about 20 minutes.
Serve warm with grilled meat, fish, or poultry,
