2 c flour
1 1/2 tsp baking powder
1 tsp soda
1 tsp salt
1/2 tsp cinnamon
1/4 tsp allspice
4 eggs
1/2 tsp vanilla
4 c grated carrots
1/2 c chopped nuts... *optional*
1 1/2 c. sugar
1 c vegetable oil

Directions:
Preheat oven to 350º Lightly grease 9 x 13 baking pan. Stir flour, baking powder, soda and salt. Mix until well blended . Set aside . In a large bowl mix sugar and oil together using a mixer. Beat eggs in one at a time , add vanilla. Gradually beat in dry ingredients into egg mixture. Stir in carrots(and nuts). Turn into prepared pan and bake in preheated oven for 40 minutes.

14oz . pkg of Philadelphia cream cheese
2 c icing sugar
1/4 c butter or margarine
2 tsp vanilla and add milk slowly . little at a time
