1/2 pound ground beef
1/2 tsp. salt
2 (16 oz) jars of your favorite spaghetti sauce
1 (6 oz) can tomato paste
1 (16 oz) lasagna noodles
2 eggs slightly beaten
2 cups cottage cheese or ricotta cheese
Dash freshly ground pepper
1 pound mozzarella cheese, thinly sliced
1/2 cup grated parmesan cheese
Optional: 1/2 cut dry red wine

Directions:
Brown meat in large skillet; drain off excess fat. Add 1/2 teaspoon salt (if adding wine, do it now and simmer 3 to 5 minutes). Stir in spaghetti sauce and tomato paste. Cook, stirring occasionally, 10 to 15 minutes.
Boil lasagna in large amount of salted water, 5 minutes using medium heat. Stir with wooden spoon for easier handling. Drain, rinse with cold water.
Combine eggs, cottage cheese, pepper and parmesan cheese; blend well.
Grease a 13X9X2 or larger baking dish. Layer the noodles in the bottom of the pan. Spread with half the cheese mixture. Add a layer of mozzarella cheese. Spread with half the spaghetti sauce.
Repeat with the noodles, cheese mixture, mozzarella and spaghetti sauce.
If you have any leftover mozzarella cheese, layer it on top of the sauce.
Bake in a 350º oven for 30 minutes or until bubbly.
Let stand 10 minutes before serving.

I usually use cottage cheese instead of ricotta because my family likes this with a creamy, gooey texture.
