l lb. ground beef or turkey
1 cup diced onion
1 - 2 carrots (julienned)
3 stalks celery ( chopped)
2 garlic cloves (minced)
29 oz. diced tomatoes
15 oz. red kidney beans
15 oz. great northern beans
15 oz. tomato sauce
12 oz. V-8 or vegetable broth
1 tsp. vinegar
1 tsp. salt
1/4 - 1/2 tsp. oregano
1/4 - 1/2 tsp. basil
1 tsp. pepper
1/8 - 1/4 tsp. thyme
1/2 lb. ditali pasta

Directions:

Brown beef/turkey in a large stock pot over medium heat - drain off fat.

Add onion, carrot, celery and garlic and saute for 10 minutes.

Add remaining ingredients, except pasta, and simmer for 1 hour.

After 50 minutes, boil pasta according to directions.

Drain pasta well.

Add pasta to bowl and add soup.

I made the soup with beef and turkey and to my surprise the turkey was just as good and is better for you.
