1 lb. Butter nut squash, peeled and diced.
1/2 onion diced
1 T curry powder
1 cup sherry wine
2 oz butter
3 cups rich chicken stock
2 cups apples, peeled and cored
2 clove garlic
1 cup cream
2 T flour 1/2 t worchestershire sauce

Directions:
Directions:
In dutch oven sweat the squash, onion and garlic with butter. add curry powder. Add flour and combine all other ingredients...cook 5 minutes and deglaze with sherry..Add chicken stock ...bring to a boil....then simmer 1 hour....Puree in blender....put back on heat and add cream....salt and pepper and a dash more sherry

This is just a base recipe....I have use peaches in place of apples....I have also over roasted the squash and apples before using them in the soup....
