3 cans of diced tomatoes
1lb. of Italian sausage
1 package of cheese tortellini (dry)
1 onion
2 cloves of garlic
2 cans of chicken stock
Italian seasoning mix

Directions:
Directions:
Brown the Italian sausage in a large stock pot, until cooked thoroughly. Add in diced onions and chopped garlic. Cook until the onions are clear. Add your cans of diced tomatoes and chicken stock. Bring to boil, add your tortellini and cook as directed on the box. Sprinkle with some Italian seasoning for desired taste. Dan always adds in a tsp or so of crushed red peppers to give it a kick. We serve it with garlic bread.

I use the cans of diced tomatoes with the green chilis because I like a little kick in mine. You can also add kidney or chili beans a day or two later for a completely different meal.
