1/2 lb of softened butter
1 cup firmly packed brown sugar
1/2 cup granulated sugar
2 eggs
1 tsp vanilla
1 1/4 cup all purpose flour
1/4 cup coconut flour
1 tsp baking soda
1/2 tsp salt
3 cups oatmeal
1/2 cup unsweetened shredded coconut (optional)
1 cup crushed, toasted sliced almonds

Directions:
Directions:
Pre-heat oven to 350º. Toast almonds for approximately 10 minutes until slightly browned, mixing often and set aside to cool for a few minutes, then crush them by hand to make smaller pieces.

For cookies: Oven at 350º. In one bowl combine all-purpose four, coconut flour, baking soda, and salt and set aside. In a separate large bowl, beat butter and sugars until creamy (8-10 minutes). Add eggs and vanilla, beat well. Add the dry ingredients to the wet and mix well. Add almonds and shredded coconut (if using) mix well.

Drop by rounded tablespoons onto ungreased cookie sheets and bake 10-12 minutes or until light golden brown. Cool for 5 minutes and remove to cooling rack. Cool completely and store.
