1 cup scraped nopales (cactus often sold in Mexican markets)
4 large eggs, beaten
2 cloves chopped garlic
1 small chopped onion
2 chopped, raw green chile peppers
3 Tbs. lard, or Crisco
1 Tbs. chili powder
salt and pepper to taste

Directions:
Directions:
Parboil the nopales and cut into cubes. Fry the garlic, onion and chiles in either lard or Crisco. Add the chili powder, salt, and pepper. Pour in the eggs and scramble. Just before the eggs are set, add the nopales and continue stirring until the eggs reach the desired consistency for your taste. Enjoy!

Having lived in both Houston, and now Galveston for the last 30 years, this is a breakfast dish that combines the tastes of Texas and Mexico. You can serve it in corn or flour tortillas which have been lightly warmed in a dry skillet if you wish.
