Pavesini cookies
3 eggs
1 cup + 1/3 mascarpone cheese
6 tbsp of sugar
4 cups of coffee
3 tbsp of elisir s. maarzano liquor
pinch of salt
grated chocolate for dusting top

Directions:
Directions:
Make the espresso coffee and let it cool.
Beat the egg whites with the sugar until soft peaks are achieved then add the marscapone cheese and mix. Add the egg yolks and and the 2 tbsp of liquor and set aside. Then place the espresso in a bowl with another 3 tbsp of the liquor and soak each cookie into the mix and add to a pan until 1 layer is covered then add the marscapone filling generously covering each cookie and make a 2nd layer dipping more cookies and finish by covering the top with more marscapone cheese and grating the fresh chocolate on the top

There is no better way to make Tiramisu then this recipe ! The Favale's use this particular liquor and the Pavisini cookies and it's what makes it so much better than all the rest. As for the acutual recipe I got it directly from the Borsci website.
