1 cup of butter
2/3 cup sugar
2 egg yolks
1 egg
3 tbsp of white wine
1 tsp of vanilla extract
2 cups of all purpose flour
1 cup cornstarch
1 tsp baking powder
zest of 1 lemon
dulce de leche for filling

Directions:
Pre heat oven to 350º
In large bowl mix the butter and sugar until smooth. Then add the egg yolks , whole egg, white wine and vanilla and beat together. Gradually add in the flower, cornstarch, baking powder and lemon zest and continue to beat until incorporated. Then gather the dough together and divide the batter and wrap each half in plastic wrap and let it rest in the fridge for about 20 minutes. When ready , flour your work surface and roll out the dough until about 1/8 in. in thickness then begin cutting the cookies out.
Place the cookies on a greased cookie sheet and bake for 10-15 minutes. Let the cookies cool then add the dulce de leche filling in between 2 cookies and form sandwiches.

I either use a traditional round cookie cutter or you can use the top of a round glass.
For the filling use about 1 tbsp per sandwich pair
