4 Tbs. sweet butter
2 Tbs. vegetable oil
4 1 inch veal loin chops
salt and freshly ground pepper to taste
1/3rd. cup finely chopped yellow onions
1/3rd. cup medium-dry sherry
1/3rd. cup chicken broth
2 Tbs. lemon marmalade
1/4th. cup Creme Fraiche (or any other heavy cream)

Heat butter and oil in a large skillet until very hot. Add the veal chops and sear well on both sides seasoning to taste with salt and pepper. Reduce heat and cook until chops are slightly underdone and still juicy. Remove from skillet, cover and keep warm while making the sauce.

Add the onion to the butter and oil remaining in the skillet and cook covered over medium heat for about 15 minutes. Add the sherry, stock and marmalade and bring to a brisk boil, stirring up browned bits in the skillet; reduce mixture by one third and whisk in the creme fraiche. Simmer for another 5 minutes. Transfer the chops to a heated serving platter and spoon some of the mixture over them using the additional sauce to taste. Enjoy
