4 eggplants
1/2 lb of Ham thinly sliced
1 salted Mozzarella thinly sliced
Tomato sauce

Pre heat oven to 400º on bake
Cut off both sides of each eggplant and cut the eggplant in half and cut into thin stripes. Add the stripes of eggplant to a bowl of cold water to remove any bitterness. Change the bowl of water about 3x. Remove and pat dry. Add the eggplant stripes to a bake sheet and drizzle with olive oil and bake until tender about 10-15 minutes.
Remove the tender eggplant from the oven and let cool. Once cooled , take each stripe of eggplant and place a peice of ham onto it and topping it with a peice of thinly sliced Mozzarella and roll it tightly. Continue this until all you have used all your eggplant slices and arrange them in a bake sheet . Spoon a layer of tomato sauce over the top of each eggplant roll. Cover the bake dish with foil and bake for 1 1/2 hours.
