6 oz elbow macaroni
3 T butter or margarine
1/4 cup finely chopped onion
2 T all purpose flour
1/2 tsp salt
dash of pepper
2 cups milk
2 cups cubed American or Velveeta cheese

Directions:
Directions:
Preheat oven to 350º
Cook Macaroni according to package directions; drain
In a saucepan melt butter or margarine.
Cook onion in butter until tender but not brown.
Stir in the flour, salt & pepper.
Add milk all at once; cook & stir until thickened and bubbly. Cook & stir 1-2 minutes more.
Add cubed cheese; stir until melted.
Stir macaroni into cheese sauce.
Turn into a 1 1/2 qt casserole dish.
Bake at 350º for 30-35 minutes.
