2 cups white rice
4 cups chicken broth
1/4 vegetable oil
1/2 cup red wine vinegar
1 tsp Dijon mustard
1 1/2 tsp salt
1/2 tsp pepper
1 T dill weed
1/4 tsp basil
1/2 cup green pepper, chopped
1 cup cheddar cheese, shredded

Directions:
Directions:
Cook rice in chicken broth. Cool.
Mix together oil, vinegar, Dijon mustard, salt, pepper, dill weed and basil. Toss with rice and then add green pepper and cheddar cheese. Serve chilled.
