cubed lamb (about 1/4th. pound per person)
cherry tomatoes
green bell pepper, cut into 1-inch squares
pearl onions, peeled


Marinade Ingredients:

1/4th. cup red wine vinegar
1 tsp. mixed herbs made from half rosemary, and half thyme
2 cloves of garlic, peeled and slightly crushed
1/4th. cup olive oil
1 Tbs. dark soy sauce
1 Tbs. dry sherry

Cut the lamb into 1/2-inch cubes and marinate them overnight, refrigerated. Remove the lamb from the marinade, and drain over paper towels. Slide cubes onto metal skewers, alternating with 2 cherry tomatoes, a square of bell pepper, and a pearl onion. Broil for about 10 minutes. Serve immediately. Enjoy!

Directions for Marinade:

In a large bowl, combine all ingredients. Stir briskly. About 3/4ths. of a cup of marinade is enough for 1 1/2 pounds of lamb cubes.
