1-10 oz package frozen chopped spinach (thaw out in the fridge the night before, completely drained.
1-16 oz container low fat cottage cheese
1 cup gorgonzola cheese
½ stick butter
3 tbsp. butter
5 large eggs, beaten to blend

Directions:
Directions:
Preheat oven to 350 degrees F and butter a 6 to 8 cup soufflé dish (it rises a lot so make sure you have room in the oven). Place spinach in a large bowl, mix in cottage cheese, gorgonzola cheese, flour and then season with salt and pepper. Add eggs and stir until well-blended. Transfer mixture to prepared dish and bake for 1 hour and 15 minutes.
