2 tbsp. bacon drippings
1/4 c. onion, chopped
3 tbsp. flour
1 bay leaf
1 1/2 c. tomato juice or tomato cocktail
1/2 c. milk or cream
2 tsp. brown sugar
1/8 tsp. celery salt
1/8 tsp. black pepper

Directions:

Melt the drippings into a medium saucepan over medium heat. Add the onion, and cook until they begin to yellow. Add the flour and bay leaf and continue to cook until the flour is deep gold, about 4-5 minutes.

Add tomoto juice, and then whisk until smooth. Add the rest of the ingredients and cook until the mixture completely thickens and is the consistency of thick gravy, about 4-5 minutes longer. Remove bay leaf and serve over fried slices of cornmeal mush, cornbread, mashed potatoes, baked potatoes, etc.

This was one of my Dad's favorite recipes. Tomato Gravy is a breakfast specialty among the Amish. Some people like to serve it on toast.
