5 lbs potatoes
1 med onion finely chopped
1/3 c. fresh squeezed lemon juice
2/3 c. light salad oil
1 tsp salt
1/4 cup fresh parsley chopped

Directions:
Directions:
Boil potatoes until firm but tender
Cool and quarter lengthwise , then slice.
Place in appropriate sized bowl.

Combine lemon juice, salad oil, salt, onion and parsley (save out about 2 tbsp. for garnish) in a jar and shake vigorously until well mixed ( taste for desired saltiness add more if needed, it needs to have a robust salty taste to balance the lemon).

Pour sauce mixture onto potatoes and mix carefully ( so as not to mash potatoes).

Sprinkle left over parsley on top as garnish. You could use cilantro instead for a little different taste.

This recipe was acquired when I was in Germany. The lemon/oil sauce is equally good over green beans or sliced tomatoes. It also makes a good salad dressing.
