2-5 boneless skinless chicken breasts, cubed
1-3 tsp crushed red chili peppers
3 Tb extra virgin olive oil

1 cube butter
1/2 cup flour
7 1.2 cups milk, heated
8 oz Parmesan cheese, grated
8 oz extra sharp white cheddar cheese, grated
1/4 tsp nutmeg
1/4 tsp cayenne pepper
2 tsp salt
2 4 oz cans chopped green chilies

Directions:

Fry chicken in oil with salt & pepper and crushed chilies until well browned in sides & set aside.
In a large skillet, melt butter, stir in flour, making a roux. Add 7 1/2 cups milk, pre-heated milk (warm to hot). Whisk continually until thickened and smooth. Add remaining ingredients. Heat through, but do not let boil or it will separate. Add cooked chicken. Serve over hot linguini.
