1 3 to 4 pound leg of lamb
3 cloves of garlic, cut in slivers
1/4th. cup chopped fresh mint (or 1 1/2 Tbs. dried)
1/4th. cup chopped fresh parsley
2 tbs. instant minced onions
Sea salt and freshly ground black pepper to taste

Preheat oven to 350 degrees F.
With a sharp knife, make slits over the entire surface of the roast. Fill holes with garlic, mint, and parsley either by combining all ingredients, or by distributing them among the slits randomly. Sprinkle with instant minced onion, and freshly ground sea salt, together with ground black pepper to taste.

Place leg of lamb roast in an oiled baking pan, fat-side-up. Roast until lamb is tender and medium rate. Enjoy!

I enjoy getting the full flavor of lamb by it being served medium rare with its natural juices running from the delicate pink meat. After trying the meat cooked to medium rare, I'm sure you'll never eat it any other way.
