1 small eggplant (about 1/2 pound)

1/4th. cup olive oil
1 pound ground sirloin
1 pound ground pork
1 pound ground veal
1 cup bread crumbs
1/2 cup grated Parmesan cheese
1 medium onion, minced
2 cloves garlic, minced
3 eggs
2 tsps. salt
1 tsp ground black pepper


Directions:

Preheat oven to 350 degrees F.
Remove stem and skin from eggplant. Dice pulp; salt liberally and drain in a colander for 15 minutes. Rinse salt off with cold water; drain and dry with absorbent paper. Saute eggplant in hot oil until lightly browned (5 to 8 minutes). Set aside.

In a large bowl, combine all ingredients. Mix in eggplant. Pour into an oiled loaf pan and bake for 1 1/2 hours. Cool for 10 to 15 minutes before serving. Enjoy
