2 Tbs. olive oil
1 medium yellow onion, chopped
2 cloves garlic, chopped
1 8 to 12 ounce can of diced tomatoes
1/2 cup dry white wine
1/2 tsp. salt
1/3 cup chopped fresh parsley
4 dozen mussels

Directions:
Directions:
In a saucepan, heat olive oil and saute onion and garlic for 3 minutes. Pour in tomatoes and juice, wine, salt, and parsley. Cover and simmer for 10 minutes.

Scrub mussels under cold running water; remove and discard any beards; drain. Add mussels to sauce and steam until they are open (5 to 10 minutes). Discard any unopened mussels. Serve with a crusty loaf of bread for dipping if desired. Enjoy!
