1 1/2 cups bread crumbs
1/4th. cup small capers
1/4th. cup chopped fresh parsley
1/4th. cup grated Parmesan cheese
6 black medium Italian olives, minced
1/4th. tsp. black pepper
2 pounds sole fillets
Olive oil
Flour
1/3rd. cup onions, chopped
2 Tbs. olive oil
1 8 to 12 can of diced tomatoes
1 tsp. salt
1/4th. tsp. black pepper
3 tsps. dried basil

Directions:
Directions:
Combine bread crumbs, capers, parsley, cheese, olives and pepper. Spread over fillets, and sprinkle them with olive oil. Roll and secure the open ends of the fish with toothpicks. Dredge the rolls in flour and brown lightly in 2 Tbs. hot oil.

Make a topping sauce. In a large skillet, saute onion in hot oil for 3 minutes. Stir in tomatoes, salt, pepper, and basil. Cover and simmer for 15 minutes. Correct seasoning if necessary.

Pour the topping sauce over the fillets and depending on the size of the fish, serve each guest 2 or three pieces per person. Enjoy!

This recipe works well with swordfish as well; however, I do not dredge the swordfish.
