Cooking Spray.
6 slices bread (white, whole grain or raisin).
1 tsp. ground cinnamon.
3 large eggs.
1/2 cup milk.
1/2 cup maple syrup (or orange juice).
2 tbsp. butter or margarine, melted.
1 tsp. vanilla.
Berries, sliced banana and/or sliced kiwi for garnish (optional)

Directions:

Spray 13x9 inch (3.5 L) baking dish with cooking spray. Arrange bread slices to fit in a single layer dish; sprinkle with cinnamon.

In bowl, beat eggs with milk, syrup, butter, and vanilla until blended. Pour evenly over bread. Bake immediately or cover and refrigerate several hours or overnight.

Bake uncovered, in preheated 350ºF (180ºC) oven for 30 minutes or until firm to the touch. Serve hot, with additional syrup. Garnish with fruit if desired.
