4lb brisket
1 1/2 cups water
2 large onions, peeled and sliced
4 cloves garlic peeled and chopped
3 bay leaves
3 T pickling spices
Carrots and potatoes cut in chunks

Directions:
Directions:
Preheat oven to 325º
Season the brisket with salt and pepper.
In a large Dutch oven or roasting pan, heat the oil over high.
Sear the brisket on both sides until browned.
Add onions, garlic, bay leaves & pickling spice to top of brisket.
Pour water on bottom of pan.
Cover and put in oven for 3 hours.
Add carrots and potatoes to liquid in bottom of the pan; turning so they are coated with the dripping-add more water if necessary.
Cook for 1 more hour occasionally turning the vegetables.
When finished, remove brisket from pan and scrape off all the seasonings from the top.
Let stand for 10-15 minutes and then slice thinly across the grain.
