1 medium onion, very finely diced
3 T chicken fat
8 eggs separated & at room temperature
2 tsp salt
1/2 cup minced dill (optional)
1 1/2 cup matzo meal

Directions:
Directions:
Saute the onion in the chicken fat. Beat the egg yolks until they form a thick ribbon when the beater is lifted. Then beat in the salt, pepper and dill. Beat the egg whites until they form soft peaks and fold 1/4 of the whites into the yolks. Sift 1/2 of the meal on top of the egg mixture and gently fold in. Fold in the the remaining egg whites, sift the remaining meal over the egg mixture and gently fold together so that no dry meal is visible. Refrigerate, covered for 1 hour.
Bring 4 qts of salted water to a gentle simmer. Use a wet teaspoon to form walnut size balls and add them to the water. Cook, covered, at a gentle simmer for 30 minutes. Do not lift the pot's lid until 20 minutes have passed.
