2 Tablespoons butter
1 small onion, chopped
2 medium potatoes, chopped
1 medium carrot, chopped
1 medium Butternut squash, peeled and cubed
1 stalk celery, chopped
1 32-oz container chicken stock

Directions:
Directions:
1. Melt butter in soup pot. Cook onion, celery, carrot, potatoes, and squash 5 minutes or until lightly browned.
2. Pour in enough chicken stock to cover vegetables. Bring to a boil. Reduce heat to low, cover pot, and simmer 45 minutes until vegetables are tender.
3. Transfer to blender and blend until smooth.
4. Return to pot and mix in enough of the remaining chicken stock to attain your desired consistency. Season with salt and pepper.
5. Reheat and serve.
