2 1/2 to 3 lbs. bone in chicken pieces (thighs, drumsticks, breasts, or wings)
Vegetables (carrots, sweet potatoes, onions)
2 T. olive oil
4 cloves garlic, peeled and smashed
4 sprigs fresh thyme or rosemary
Kosher salt and black pepper

Directions:
Heat oven to 425º. On a large rimmed banking sheet, toss the chicken and vegetables with the oil, garlic, thyme/rosemary, 1 t. salt, and 1/4 t. pepper. Roast, tossing the vegetables once, until the chicken is cooked through and the vegetables are tender, 35 to 45 minutes.
