4 zucchini, about 2lbs.
2 cups tomato sauce
12 oz. lean ground beef
1 onion, finely chopped
4 cloves garlic, minced
1/2 yellow bell pepper, diced
2 tbsp. fresh mint, chopped
2 tbsp. fresh oregano, chopped
1/4 cup seasoned breadcrumbs
1/4 cup fresh parsley, chopped
1/2 cup crumbled Greek feta cheese
2 tbsp. grated Parmesan cheese

Cut zucchini in half lengthwise and scoop out inside and reserve for another use or discard. Spread 1 cup of tomato sauce in 13 x 9 inch baking dish. Place hollowed out zucchini in sauce; set aside.
In a large nonstick skillet, over medium to high heat, cook beef for 8 minutes or until browned. Add onion, garlic and pepper and cook, stirring, for about 5 minutes or until softened. Remove from heat and stir in mint and oregano. Stir in breadcrumbs, parsley and remaining pasta sauce. Spoon mixture evenly among zucchini. Sprinkle with feta and Parmesan cheeses; cover with foil and bake in 350ºF oven for 45 minutes. Uncover and bake for about 10 minutes or until zucchini is very tender when pierced with a knife.
