Salmon Fillet

1/2 cup fat free sour cream or Greek style yogurt
2 tablespoons finely chopped cucumber
1 tablespoon chopped fresh dill
1/2 teaspoon dried dill, weed
2 teaspoons minced fresh chives
2 teaspoons minced green onion
1 pinch salt
1 pinch pepper
Lemon zest & juice to taste

Directions:
Combine sour cream/yogurt, cucumber, dill, chives, lemon, salt and pepper in a small bowl cover and refrigerate for several hours for flavors to blend.

preheat oven to 325º
line a baking sheet with aluminum foil and spray with non stick cooking spray

Place fillet on prepared tray & season with salt, pepper and lemon juice or slices to taste
bake until fish flakes easily, 10 to 20 minutes depending on the size & thickness of the fillet.

Serve dill sauce along side salmon

Delicious served with rice, steamed vegetables and salad. The dill sauce is a healthy alternative to tartar sauce.
