1/2 c. all-purpose flour, 2 c. fresh or frozen okra cut into circles, 1/2 c. finely chopped onion, 1 large egg, 1/4 c. buttermilk, salt and pepper to taste.

Heat cooking oil in heavy skillet, using just enough oil to cover bottom of skillet. In bowl, mix flour, salt, pepper. Add onions and okra to coat; set aside. In a small bowl, mix together egg and buttermilk, and add to okra mixture; stir until combined. Drop 1/4 cup mounds of batter into medium-hot skillet and then flatten each mound with a spatula. Fry until golden brown, which usually takes 4 to 5 minutes per side. If browning too quickly, lower heat. Turn only once. Drain on paper towels and sprinkle with a little salt.
