3/4 cup sugar
1/3 cup all purpose flour (OR) 3 tablespoons cornstarch
1/4 teaspoon salt
2 cups milk
3 slightly beaten egg yolks
2 tablespoons butter
1 teaspoon vanilla
1 cup coconut
1 9" baked pie shell

3 egg whites (for meringue)
6 tablespoons sugar
1/4 teaspoon vanilla
1/3 cup coconut

Directions:
Directions:
In saucepan combine sugar, flour and salt. Gradually cook and stir in milk over medium heat until bubbly, for 2 minutes. Remove from heat. Slightly beat egg yolks and add small amount of hot mixture to them. Return to low heat, add yolk mix and cook 2 minutes, stirring constantly. Remove from heat, add butter and vanilla. Add 1 cup coconut. Pour into baked pie shell. Preheat oven to 300º. Make meringue of 3 eggs whites, 6 tablespoons granulated sugar and 1/4 teaspoon vanilla beaten to stiff peaks. Spread on top of coconut custard and sprinkle with 1/3 cup coconut. Bake in oven for 15 minutes to set and slightly brown the peaks of the meringue. Chill pie before serving.

Gladys taught me how to make my very first pie. The one thing that she taught me is that you must make sure you seal the meringue. This old world needs more people like Gladys Gardner in it. Material things were not important to her, the love of her family was all she needed.
