8 corn tostadas
8 eggs, fried
1 C black beans, drained
1 small onion - chopped
3 cloves chopped garlic
1 small zucchini - chopped into bite sized pieces
3-4 ears of corn, corn cut off the cob
1 red pepper - chopped into bite sized pieces
1 green bell pepper - chopped into bite sized pieces
1 jalapeno - minced
1 tbs Frank's hot sauce
3 roma tomatoes - seeded, chopped into bite sized pieces

Directions:
Directions:
In a small pan, saute ontion and garlic until onions are translucent.
In a food processor, add black beans, onion and garlic mixture. Pulse until a smooth paste is formed. - Set aside

In a bowl add all remaining ingredients, except eggs and tostadas.
Spread black bean mixture onto tostada, top with a fried egg, and add salsa.
