1 1/2 cups water
1 cup cream style cottage cheese
1/2 cup honey
1/4 cup butter
2 tablespoons sugar
3 teaspoons salt
2 packages of yeast (2 tablespoons)
1 egg
5 1/2 - 6 cups whole wheat flour
1 cup white flour (approximately)

Directions:
Directions:
Mix together water, cottage cheese, honey and butter. Stir well. Heat to lukewarm 120º. In large bowl combine liquid with sugar, salt, yeast and 1 egg. Gradually beat in whole wheat flour. (Add flour 2 cups at a time until dough is not sticky). Turn out on floured surface and knead until smooth and elastic (8 - 10 minutes). Place in greased bowl. Grease top and let rise 45 - 60 minutes until doubled. Punch down. Divide into two balls. Place in greased 9 X 5 loaf pans and shape into two loaves. Grease the tops. Let rise to 2" above pan. Bake in preheated oven 350º 45 - 60 minutes until deep golden brown. If brown, but not done, lay foil loosely on top. (Tip bread gently into hand, if bottom is done it is brown, if not tip back into pan gently and bake 10 minutes more.) Remove from pans and cool on wire rack. Brush top with butter while still hot.

Joan, taught me how to make bread when I was first married. She is such a great cook. You may also use more white flour and less whole wheat flour in this recipe or substitute 1 cup of oatmeal for 1 cup of flour. This is great served while still warm!
