1 tbsp. soft margarine or butter
2 cups chopped onion
2 cups chopped celery
1 sweet green pepper chopped
3 oz. diced smoked ham or sausage
1 1/2 lb. boneless chicken breasts, cubed
1 1/2 tsp. minced fresh garlic
2 bay leaves
2 tsp. dried oregano
1 tsp. dried thyme
1/2 tsp. each salt, cayenne, black pepper
1 28 oz. can tomatoes
1 7 1/2 oz. can tomato sauce
4 cups chicken stock
2 1/2 cups long grain white rice
1 lb. medium raw shrimp peeled
1 sweet red pepper chopped
1/2 cup chopped green onion
1/2 cup chopped fresh parsley

Directions:
Directions:
In a large pan melt margarine or butter over medium to high heat, cook onion and celery. Add green pepper, ham, chicken, garlic, bay leaves, oregano, thyme, salt, cayenne, pepper and cook, stirring.
Add tomatoes, tomato sauce and stock, bring to a boil. Stir in rice and shrimp, boil for a few minutes. Bake, covered, in 350ºF oven for 30 minutes or until rice is tender.
Stir in red pepper and green onions, sprinkle with parsley.
